Recipe – Chicken Fajita

I prefer to keep things simple in the kitchen as I am not the greatest chef but one of my favorite pro mumma + baby recipes is an easy to do Chicken Fajita

1 red bell pepper

1 orange or yellow bell pepper

1 green bell pepper

1 large red or white onion

4 chicken breasts or what ever you prefer diced into bite sized chunks or strips

Tortialla wraps – choose the seeded whole wheat variety for a lower GI, higher fiber option

Guacamole and tomato salsa – can be made at home for those of you who are adventurous ūüôā

Very simply chop up the onion and pop it in a frying pan with a little olive oil, lightly fry until soft

Add in the diced chicken to the same plan and cook through for 10 mins on a medium heat

Add in the pepper to the same pan  for around 3-5 mins

What’s so good about this stuff?

Chicken is rich in zinc, Iron and Magnesium – helping to fight cold and other nasties zinc is important for immune health while magnesium helps to regulate mood and blood sugar levels. Iron in the chicken is easily absorbed as the bell pepper provide a health dose of infection fighting and iron boosting vitmain C!

The gucamole be it home made or otherwise is your daily shot of folate, as well as being rich in healthy fats that help promote babies brain and eye development.
