I prefer to keep things simple in the kitchen as I am not the greatest chef but one of my favorite pro mumma + baby recipes is an easy to do Chicken Fajita
Ingredients:
1 red bell pepper
1 orange or yellow bell pepper
1 green bell pepper
1 large red or white onion
4 chicken breasts or what ever you prefer diced into bite sized chunks or strips
Tortialla wraps – choose the seeded whole wheat variety for a lower GI, higher fiber option
Guacamole and tomato salsa – can be made at home for those of you who are adventurous 🙂
Instructions:
Very simply chop up the onion and pop it in a frying pan with a little olive oil, lightly fry until soft
Add in the diced chicken to the same plan and cook through for 10 mins on a medium heat
Add in the pepper to the same pan for around 3-5 mins
Salsa Dip
Ingredients
- 250g/9oz fresh tomatoes, finely chopped
- 1 small onion, finely chopped
- 1 or 2 mild chillies, finely chopped
- bunch coriander, finely chopped
- Salt and Pepper to taste
- Lime Juice to taste
- 1 tbsp Olive oil
- Preparation Method
- To make the Salsa, combine all the ingredients together in a bowl and serve immediately.
What’s so good about this stuff?
